1 tbs of butter
1 leek clean n cut like i said in other leek menu
1 clove garlic
1 1/2 tbs of flour
4 celery chopped
3 carrots grated
1 potato cubed
1 3/4 cup broth veg low salt or of choice
1 bay leaf
1 cup corn kernels
4 ounces fat free cream cheese
1 cup skim milk or 1%
8 oz of light cheddar cheese
2 tbs cornstarch In a medium pot saute.. butter and leeks add garlic and continue to saute add flour and stir to coat add..celery.. carrots.. and potato with broth of choice..add bay leaf and simmer for 10 mins

remove bay leaf ..add cream cheese.. milk..and grated cheese stir to combine

in a separate small bowl add a small amount of water and cornstarch and whisk add to soup and stir to thicken......enjoy info 350 cal per bowl..protein 21g.. sodium.....630 mg wow cholesterol 49mg good taste but loaded:wink:
