Cinco De Mayo

Whats everyone making for dinner tonight for the "holiday"?

I'm making Chicken Enchiladas with whole wheat tortillas green sauce and light cheese :)
maybe with brown rice and pinto beans on the side... haven't decided yet

    Didnt even realize that was today.

    Even so, I think tonite is bleu cheese burger and fries kinda night.

    Ironically, its not their independence day. It's the celebration of them winning the battle of Puebla against the French.

    Mexico's Independence Day holiday is Sept 16, so no worries there.

    Cinco de Mayo originated among Mexican Americans to celebrate freedom and democracy during the American civil war, and also among Mexicans is celebrated as a commemoration of the Mexican defeat of the French army, which was invading in order to set up a base to support the Confederacy and de-stabilize the US.

    So relax and have a margarita. Save your indignation for something more worthwhile.

    its more of an Americanized "holiday" aka excuse to drink margs and eat some mexican food...
    There's also as someone pointed out mexican americans so tone it down a notch

    I was pretty sure someone in America made it up so that we would all bombard Mexican restaurants and have margaritas... Seems like as good as an excuse as any :) Plus chips salsa and tortillas are all on sale this week!

    Cauliflower Fuhjeetuz, Cauliflower Sour Cream, Cauliflower Cilantro, Cauliflower Jalapenos, Cauliflower Salsa, Cauliflower Chips, and a few Cauliflower Margaritas


    So basically a giant bowl of Cauliflower, a whole lot of imagination, and a ton of disappointment.

    A fresco bean burrito from taco bell and some chips with salsa. No booze for me tonight. I can't handle weekday hangovers at my ripe old age of 31... Or 25 as bartenders tell me I look ((to get a bigger tip!))

    Yesterday didnt turn out like I planned. Didnt have any Cauliflower on hand, but I did have plenty of Mayonnaise.

    So by your 'logic' Americans don't celebrate St. Patties Day either? That's crazy talk. Sorry but most of us Canadians look for any excuse to go out have a drink & be social.
