I tried to make a single serving of some pancakes I made the other day and it turned out even better.

1/4 cup/30g flour (I'm partial to whole wheat pastry flour, but regular would work)
1/2 tsp baking powder
1 egg
1/2 tsp vanilla extract
1/4 cup/62g of ricotta (I used part skim)
1/4 cup milk
1 tsp sugar

Mix dry ingredients, add wet ingredients, heat up. It made 4 big pancakes (I used a 1/3 cup measuring cup to pour the batter).

Nutrition: About 340 calories, 33g carb, 13g fat, 18g protein (I used a bit more ricotta and 2% milk). With fat free ricotta it would be less than 300 calories! They don't turn out very fluffy, but they're moist and delicious.

I'm not the biggest pancake fan. I mean they're too much work for what their worth BUT i have recently discovered how yummy ricotta is right out of the container! So I can imagine the pancakes would be pretty yummy! Thanks for the recipe!

I've only had ricotta pancakes once, but they were lemon flavored and wonderful. Try adding some lemon juice and / or grated rind.

    Amazing!

I don't like lemon much to be honest, but I've seen a bunch of ricotta lemon recipes.
