Dinner recipe - under 400 calories! Pictures included.
My favourite thing to make at the moment:
Cajun chicken with quinoa and puy lentils, curly kale, spinach and peppers.
Packed full of protein
Loads of vitamin C

Low calorie - Under 400 calories!
Low fat
Ingredients:
100g chicken breast
1/2 an onion
1 clove of garlic
1/2 a pepper
91g Quinoa (This is cooked weight. Uncooked is roughly 35g).
60g Puy lentils
60g curly kale
60g spinach
1 chicken stock cube
Light oil spray
Cajun seasoning (1tsp)
Options:
* Add some chilli flakes/chillis/chilli powder if you like it spicier!
* Mix up the veg
Method:
A very simple method that's very quick.
1. Make the chicken stock according to packet instructions.
2. Add the stock to a pan, add the quinoa and cook according to instructions (usually bring to the boil and simmer for 20 mins then leave to stand for 10 mins).
3. Meanwhile, chop the onions, garlic, peppers.
4. Slice the chicken.
5. Add the onions to a lightly oiled pan and cook for 5 mins until starting to brown. Then add the garlic and cook for 2 minutes more.
6. Add the chicken and cajun seasoning (1tsp) to the same pan and cook until browned.
7. Then add the peppers and curly kale.
8. 1 minute from the end add the spinach to wilt.
9. Microwave the sachet of puy lentils (I cannot find other kinds in supermarkets near me!) for 40 seconds.
10. Add the quinoa and lentils to the pan with the chicken and vegetables.
11. Serve and enjoy.
