Blackberry mug cake!

Made this tonight and it kicks butt!!! I'm a big fan of mug cakes because I have a major sweet tooth but need to make single servings or else I'll gobble down an entire cake! Tonight I wanted to incorporate blackberries. I eyeball all of this, and you have to play around with it depending on how much cake you want. Tonight's was:

Roughly 3tbls yellow cake mix
Splash of water
Half a tsp veggie oil
1 tsp best of the egg
Five blackberries

Mix the batter than fold in the berries. Microwave in mug for roughly 75 seconds. I bet it would also be good with a dollop of cool whip! The berries get all hot and melty and blend into the cake nicely. The cake itself was a great consistency. Highly recommend!! I over estimate this to come to about 200 cals, but I suspect it is less (I don't measure my dry mix precisely.)

    Well, you are awesome. Just think of the possibilities. We have tons of cherries canned and that with cherry cake mix.. OMG drooling. I like your idea about the cool whip. I like single serve because I'm limited. Thanks sooooooo much..

    My daughter does this and adds cocoa powder to make a mug brownie, which would also be good with cherries or strawberries.

    Mine:

    In a gallon sized ziploc bag, mix ONE box of Angel Food cake (HAS to be angel food) and one box of ANY flavor you want. When you want a 'mug cake':

    3TBS of the mix
    2TBS water
    1MIN in microwave

    Top it with anything you want or eat it plain. Delicious, and also less than 200 calories. It's in the database under 3-2-1 cake.

    I've done it. Threw away the mix. Too bland/dry. It's just not worth the calories for me. Rather spend twice the calories and have an actually satisfying piece of cake.

    Just IMO.

    I buy Lucerne "best of the egg" whites and original for omelets, scrambled eggs, and cooking. Basically it's the premixed eggy stuff in a little carton. I like normal eggs too, I just find it easier for a number of reasons. This recipe doesn't need to have egg at all, but I prefer the overall texture when there is a dash of it. A little bit of normal egg would work just as well it's just trickier to measure :)
