Does anyone have a recipe for homemade granola?

I'm looking for a lightly sweet recipe that won't spike sugar levels all crazy. Anyone have a good one?

    For the 2nd one, I used agave rather than Splenda.

    I can't attest to blood sugar impact, but the GI should be better than some recipes out there.

    I just adjusted the sugar and oil in a basic recipe I found. It used 2/3c oil, and 2/3c. Sugar, plus 1c honey. I use 1/4 c oil, 1/3 c splenda, and 1/4 c honey. It doesn't hold together as well, but I like the taste not too sweet.

    I make this one all the time. My fiance who is diabetic eats it all the time with no blood sugar issues. sprinkled on top of some no sugar added vanilla ice cream...yum

    i also have my own for granola bars. but it is higher in sugar. i use brown rice syrup and coconut sugar. it does not cause him a huge spike either.
    (
    2 cups oats
    2 cups brown rice krispies
    3/4 cups brown rice syrup
    3/4 cups coconut sugar
    3/4 cups natural smooth peanut butter
    1/4 cup each: sliced almonds, raw pumpkin seeds, raw sunflower seeds, roasted unsalted peanuts, semi sweet chocolate chips.

    in a pot heat brown rice syrup, coconut sugar, and smooth peanut butter just to bubbling

    in a large bowl combine the all the remaining (except for the chocolate chips)
    combine with the hot syrup and mix well. now add the chocolate chips
    pour into a greased cake pan (9x11) and press well. cut into bars/squares while still warm

    Granola is going to be high carb with sugar or not, you're going to have an insulin response. Anyways wheat germ is great addition to any granola recipe.

    I add in about twice the coconut. BUT, a disclaimer: I made this before beginning my diet/lifestyle change here at MFP. SO, I haven't entered it in the database to see how many calories are in it.... all I know is that it is marvelous.

    I make a "basic recipe" that I found online and I substituted a banana and honey for the oil. I bake it a bit longer than the recipe calls for and my kid adds whatever he likes that week to it. It's delicious and low fat.

    Check out the "piecesinprogress" tumblr blog. She had a great post recently about how to mix and match your own granola. I made one with oats, almonds, cranberries, peanut butter, protein powder, honey and maple syrup. Just had some on yogurt for my midmorning snack!

    Granola (Chocolate)



    Ingredients:

    3 cups rolled oats
    1 cup slivered almonds
    1 cup cashews
    3/4 cup shelled sesame seeds
    1/4 cup plus 2 tablespoons dark brown sugar
    1/4 cup plus 2 tablespoons maple syrup
    1/4 cup vegetable oil
    3/4 teaspoon salt
    6 ounces semi-sweet chocolate chips


    Directions:

    Preheat oven to 250 degrees F.

    In a large bowl, combine the oats, nuts, sesame seeds, and brown sugar.

    In a separate bowl, combine maple syrup, oil, and salt. Combine both
    mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 20 minutes to achieve an even color.
    If using both racks, rotate sheet pans each time.

    Remove from oven, let cool, and add chocolate chips. Transfer into a large bowl, and mix until evenly distributed. Cover and wrap with plastic wrap, then stash in the fridge until cool. Give a shake (flip) every once in a while until chocolate is once again firm. Store in a air tight conatainers!

    Makes about 12 cups.
