Going to attempt to make mashed cauliflower for the first time. Curious on the recipe you use to make the best mashed cauliflower. And calories and all that :-)

I use 3 tablespoon of light cream cheese (45g) for a head. That's it. Then mash and add salt and pepper. It's delicious and very low cal.0

I always baste mine in an olive oil and garlic mixture. Bake the garlic first for 35 minutes @ 350 till it turns to butter. Then add about 1 full clove to 1/2 cup of olive oil, add a bit of salt for seasoning, pour it over the cauliflower, then throw it away and eat a potato. It's about 160 -200 calories if you don't add butter.0

I actually do a combo regular potatoes and cauliflower. Like 3/4 ratio cauliflower and 1/4 ratio regular potato. I use a little yogurt butter and Fage 0% plain yogurt? It's approximately 100 calories for a cup and a half.0 -
I like it with the light cream cheese and also roasted garlic. A little salt and pepper. It's good!0

This is the recipe I tried the other day and it was really good. For the plan I am using this counts as 1 serving. I realize everyone does things differently. This was really simple to make and tasty! I swapped out one of the regular laughing cow cheese wedges for a garlic and herb one and had a nice garlic flavor to my "potatoes".
1 1/2 cup cooked cauliflower
2 Light Laughing Cow Cheese Wedges
1/16 tsp (half of 1/8 tsp) Salt
1/8 tsp pepper
Directions:
Combine all ingredients in a bowl and use a hand mixer and mix until creamy. You can also use a food processor for this.
When I input all of the ingredients on MFP it told me; 109 calories, 10g carbs, 3g of fat, 7g protein, 580mg sodium and 6g sugar.0 -

I use a scoop of light cream cheese and a scoop of sour cream. Lots of black pepper.
I resisted this for a long time because I'm against "fake" mashed potatoes, but once I decided to eat my potatoes but try mashed cauli as well, it really is delicious.0 -
I steam a chopped head of cauliflower with lots of garlic cloves (around 5-10). Make sure it's completely steamed or else the consistency won't be very smooth. Then I blend in food processor with 2 tbls butter, around 1/2 cup almond milk (only 30 calories/cup!), and salt/pepper/herbs to taste. You can also add some cream cheese or parmesan cheese for more flavor, but I usually leave this out. I actually made this tonight, and this is one of my favorite side dishes! It will be around 350 calories for one medium head of cauliflower, but it serves 4-6 people easily.0

Roast the cauliflower in the oven, or else you have to ring all the water out of it to not end up with soupy mash. Also use a potato masher not a blender or food processor, or they get gummy, just like over whipped regular potatoes do. Cream cheese is ok, I use real butter and cream and a little bit of fresh garlic. Please don't put almond milk in this....0

steam the cauli in a steamer or microwave, that way it doesn't absorb too much moisture.0

Another thing to keep in mind, cut off all the stems, they don't mash well, just use the head.0
