    I kind of cheated. Used Birds Eye, Ultimate Southwest Blend. Steamed package and when cooled added avocado, cheese and dash of dressing. There was 4 servings in package and 2/3 cup only 90 calories, so adding leftovers was easy.

    ETA: I found bagged black beans in the freezer section at our grocery store. They have no added salt, so its great for those wanting to cut down on sodium. You also don't have to drain it like you would with canned. Nothing wrong with canned beans, but was glad to have found these...they are quick to make and you can thaw only the amount you need for your recipe!

    Looks very tasty, easy, and filling! I steam a big bunch of brown rice in my steamer then make pre-portioned 1/2 cup bags to keep in the freezer...this looks like it will be the next recipe I use those on!

    Good stuff! We make something like this at least once a week, and I totally agree with your comparison to Chipotle.

    I tried this for dinner last night and I absolutely loved it I brought some for lunch today. It is very filling after making it I realized you could definitely add different things of course it would change the Calories but it was FANTASTIC just the way it was. Thanks for sharing.
