Why did I stop losing weight?

Saturday, which is May 17th will make the 3rd month of loosing weight...
Now, my starting weight was 163 pounds... and now the scale is saying 153 pounds - 156 pounds.
Now, 4 days ago... when I got on the scale it said 150.9 ... now I am used to the scale going up 3 or 4 pounds due to water and sodium... which is why I stopped weighing everyday. I just started weighing once a week... and the scale has not been back to 150.9 in 5 days. I see the inches falling off my waist, and arms and shoulders especially. But there are times where I look in the mirror so hard and feel like the fat has returned and I just break down.
Now, I've been cutting calories, and has removed all of the sodas, junk foods, candy and any major foods from my life. All of my chicken has been in a baked form...
I've been cutting calories and some days I stay below my calorie intake not on purpose but some days I'm just not hungry after eating 1200 calories, it's not a everyday thing though. It's not like I am starving myself. I have took a break from my cardio and working out... but tomorrow I am started back full force.
WHY DID I STOP LOSING? and can the water weight and sodium cause the scale to go up 6 pounds.

Of the foods you are actually tracking most are quite high in salt...it is possible you are going though a fluid retention cycle...but as your sodium is always up I would have thought you fluid levels would be stable.
Your daily food diaries seem to be incomplete...if they are as stated you are under eating. If they are incomplete it is likely that you are eating more than you think.
I would suggest that you properly track for at least a couple of weeks and see what happens...be honest with your tracking...if it passes your lips it goes in. Only by properly tracking will you have a clue as to why you are not losing weight.0 -
i see alot of simple carbs (not complex whole grain), fatty meats and hardly any veggies....maybe try the eggs in the am with spinach and mushrooms and some oatmeal instead of waffles and chicken or tuna with a salad in the afternoon.....try to eat a little more clean and less sodium and see how that helps your body. Just a thought0
