I made this tonight for me and my mom and it was totally good!
1 1/2 pounds of white fish: cod, haddock, any firm white fish
Cooking spray
1 tablespoon fresh lime or lemon juice
1 tablespoon light mayonnaise
1/8 teaspoon onion powder
1/8 teaspoon black pepper
1/2 cup fresh breadcrumbs
1 1/2 tablespoons margarine
thats what the original recipe calls for but I used just enough fish to feed me and my mom and used only 1/4 cup of breadcrumbs!
spray a pan with cooking spray. mix the light mayo, lemon juice, onion powder and pepper together and spread it all over the fish, sprinkle the breadcrumbs on top if it. Drizzle with melted margarine and bake at 425° for 20 minutes or until its flakey! it is so good!
I served mine with some brown rice and you can add some steamed broccoli but this is all i had until i go shopping tomorrow!

I tried this recipe last weekend and subbed the butter with butter spray. It was a big hit with the family. We use Swai, now I have 2 ways to cook it. Thanks for the great recipe! I may try it with some grated Parmesan next time.0
