High Calorie, Healthy Foods

I get to the end of the day and have hundreds of calories remaining. Today, as I sit here, I am at 900 calories for the day (could have been worse, but I was riding in a car all day). So I need to eat 300 calories just to hit 1200 and I have a couple hundred beyond that as my target. I tend to do something stupid to find small, high calorie, snacks. Beer, cheesecake, etc. I'd like to replace that with something healthier, but it seems like all the healthier stuff is low calorie and I would have to eat a ton of it. I'm tired and not really interested in spending thirty minutes eating salads and stuff.

any kind of nuts+seeds (walnuts are yum) , dried fruit (^_^ I could eat a whole bag of raisins ) , you could always try adding more fat to your other meals like oils, cheese, butter etc.
drink juices and things with calories in if you're predominantly drinking water!

However beer and cheesecake seem awesome and reasonable if you've been healthy all day ;3 or check out your local healthy food store (mines Holland & Barret) and they usually have tons of healthy crap you can try

You could always compromise in the middle. 300cals is a 3-egg omelette (or even just 3 hard boiled eggs) for example, so you could get something that's not-salady that's still high protein and doesn't take all night to eat.

Great suggestions, thank you. I am trying to build healthy habits when I shift into maintenance mode.
