What do you do with cauliflower? I'm accustomed to eating it with cheese, and need to change that. Other than steaming it, what do you do with it? Also, healthy ideas for the following??
Asparagus
Broccoli
Eggplant
Mushrooms
Yellow Squash
We're still trying to get used to this diet, and these are a few veggies I CAN have. So, I'm wondering how you fix them for more ideas. So far, I'm just putting them under the broiler, or using the mandolin slicer to make chips with some of them.

I like cauliflower roasted with a drizzle of olive oil, sprinkled with coriander seeds, salt&pepper.
I saute asparagus in a sauce made from chicken stock(or bouillon) with lemon and a little cornstarch to thicken.
Broccoli is good raw, dipped in greek yogurt and salsa, or steamed, or roasted with garlic. Basil is good with broccoli, too.
The only thing that's ever come out well for me with eggplant is to bread it and bake it, like eggplant parmesan.
Mushrooms, well, I use those in just about everything! Any stir-frys, cooked with chicken, in sauces, in barley, I love mushrooms!
Same with yellow squash. Saute it, steam it, roast it. It is great with mushrooms and other veggies. Sometimes I put it in a big pot with soup mix, diced carrot or sweet potatoes, onion, garlic, mushrooms, and a can of chick peas.0 -
Steam it for 15 min, salt, pepper, and garlic powder.0

I like to slice yellow squash and bake it in the oven mixed with chicken breasts and chicken broth. Makes a nice chicken/squash soup. Egg plant and squash are both real good grilled too.0

Asparagus you can grill, put in a quiche or eat cooked with for instance grilled ham and eggs.
Eggplant is very nice grilled in slices, or use it in a thai curry.
Mushrooms, endless options, grill, bake, cook, fill.
Yellow squash, grill it in the oven with some kurkuma or with rosemary and garlic. Make it into soup or make a curry.

Asparagus: toss with olive oil, sprinkle with sea salt, and broil. Yellow squash & zuccini can be halved lengthwise & seasoned in the same manner, then broild or grilled. Any of these can be spritzed with lemon or lime juice when served, if you like that citrus "pop".....0

Cauliflower Fritters: Boil until tender, mash, mix with egg, some spices, and a few bread crumbs if you want. Shape into patties and fry in a little oil or butter, until browned.0

Asparagus (green!), broccoli and cauliflower are fine vegetables for (Thai) curry. For eggplant, I like to make moussaka. Check out this recipe: http://turkishdiet.blogspot.nl/2006/12/eggplant-moussaka-patlcan-musakka.html. But: Don't fry the eggplant. Slice it and stick it in the oven on a baking sheet for a while (honestly, I just keep checking). I often make this recipe with 50/50 eggplant and zucchini.0

My fiance does mashed cauliflower with a bit of skim milk and margarine for a mashed potato alternative. He also does them as latkes.0
