Omelets combinations?

Getting bored with egg whites, peppers, onion and cheese.

Any other tasty combination? I don't like mushrooms. I've done tomato/mozzarella but it gets too watery for my taste.

    Do you have to lose the yoke part? I am very new at this so please take my question with a grain of salt, but for me, eggs are not eggs without the runny yoke.

    Try spinach or plain low fat cheese. Also Turkey bacon is good

    Nah, I do both, I only do egg whites and I'm trying to save calories, lol.

    Whenever I have black beans for dinner, I save a serving for my breakfast the next day. I attempt an omelette with them, but it usually turns into more of a scramble. Then I top it with salsa so it's not so watery.

    Ah, okay so like you want to save more of your daily calories for dinner or a special lunch or something. I get it. Again, very new to me, and although I eat way below what my calorie thingy says to eat, I am trying to figure it all out and learn how to eat. I am so afraid to eat lately, but I am working on it.

    Once in a while, I'll do a sweet version by adding a splash of vanilla extract and dash of cinnamon to the eggs. I'll cook it in coconut oil or butter, then top with some chopped nuts and/or sliced fruit. Pecans and banana are my favorite combo. So I suppose that's more like a crepe than an omelette, but a nice change of pace once in a while.

    Yes it's white. I actually like it better with peppers with just whites than with whole eggs for some weird reason.

    Can't. Any kind of egg with sugar or vanilla makes me gag now ever since I tried to make a microwave custard and failed (unless obviously it involves flour too, lol).

    Black beans is a great idea! I am going to do this soon!

    I like to slice some avocado and then top it with salsa. Goat cheese and asparagus is also a great combination.

    The easiest way to cook asparagus is rinse it, snap the coarse bottom part of the stalks off and microwave it for about 3 minutes. The tastiest way, IMO, is on a grill bathed in olive oil, but the microwave way is fine for adding to an omelet and it's very low in calories cooked that way.

    As for omelet combos...what leftover veggies do you have on hand? Right now I'm eating a frittata with tomato and green beans, because I'd stewed them together the other night and had leftovers, but not quite enough to be a good serving on its own. Surprisingly good, though the green-bean texture is a little odd.

    Asparagus is easy to roast! Just rinse and trim the ends, lay out on a foil covered cookie sheet, and brush with olive oil and/or balsamic vinegar. Roast at 400 degrees for at least 10 minutes or longer, depending on how "dead' you like it.

    Other omelet ideas:

    --Mexican style, topped with salsa, a dab of sour cream and cilantro or green chiles

    --Italian style, topped with pasta sauce and basil

    --Indian style, with garam masala, cumin and curry powder

    --Mediterranean style, with taboule salad and feta cheese

    --Include broccoli slaw mix with your onions, peppers, etc.

    I always think of my omelets as a super veggie mix with a bit of egg.

    My favorite omelets are:

    cheddar and asparagus. Cut fresh asparagus up into small pieces and blanch in boiling water and then drain before putting in the omelet.

    Avocado, and tomato. Add them both after the egg is essentially cooked, with just enough time to warm them, otherwise it gets watery.

    Broccoli slaw also makes a really good omelet. And it's so easy. Just pull the chopped broccoli out of the bag and put it in the omelet before folding. I put cheese with mine.

    And of course, ham, peppers and onions.

    I like roasted red peppers with diced avocado. Fresh spinach, onion, black olives and goat cheese is great , too.

    Shrimp! I get one of those frozen bags of peeled shrimp, thaw them, and then throw a handful in my omlette with some cheddar cheese and various veggies.

    Spinach and Feta is my Sunday morning go-to. They also have sauteed onions and tomatoes in there. I ask for heavy veggies, light Feta.

    Shred up some sweet potato and saute that in a pan before adding the eggs! I really like sweet potato, feta cheese, and green onion.
