I really love to chop, mix, and oven bake or grill sausage, veggies, and spices in aluminum foil packets. We call these "boyscouts." Great option if you have picky eaters; everyone gets their own!0

Hey there!
I would highly recommend making Shakshuka with the keilbasa.
Here is the recipe I base mine around http://toriavey.com/toris-kitchen/2010/07/summer-2010-travel-blog-shakshuka/
I omit the bell peppers and used canned crushed tomatoes instead of fresh tomatoes. I sauteed mushrooms with the onion as well; you could throw the keilbasa in with them to brown it a bit and get some really nice flavor.
I have made this recipe several times and I could never get the egg whites and the yolk right (they were either over cooked or runny) So, I started putting the egg whites into the dish first, and baking it for a while, and then adding the yolks on top. Has been perfect ever since

Ingredients
28 ounces beef Polska Kielbasa gluten free (2 packages) sliced in bite sized pieces
28 ounces canned tomatoes
4 ounces canned mushrooms
2 stalks celery, chopped
1 zucchini, chopped
1 bell pepper, chopped
1 teaspoon Italian seasoning
1 teaspoon minced garlic
1 teaspoon onion powder
Directions
In slow cooker, layer sausage and veggies.
Combine tomatoes, onion powder and garlic.
Pour over sausage. Cover and cook on high for 3 to 4 hours. Stir before serving.0
