Coleslaw Recipes?

My favorite is an asian spicy peanut slaw recipe. The quantities are fairly flexible depending on the size of the cabbage:
1 average sized head of cabbage (~1 lb) shredded
1/2 cup low fat crunchy peanut butter
1/4 cup low sodium soy sauce
1/4 cup (4 tbsp) ginger garlic paste (one of my favorite low-cal spices of all time!)
Ground cayenne pepper to taste (I use A LOT!)
Mix all ingredients except cabbage together into a dressing (I sometimes toss in the microwave for 30 seconds to make the peanut butter easier to stir), then toss over cabbage.
This yields approximately 10 1/2-cup servings at ~90 calories each.
The peanut butter is the only thing in it of any major calorie consequence, so if you can make do with less, you can save yourself some calories and enjoy a bigger portion!0 -
