Looking for Quinoa Recipe

For those of you who have tired, it loved it and keep coming back for seconds or thirds. I am new to quinoa, well maybe I am late to the bandwagon☺.

    The recipe for stuffed tomatoes and for stuffed bellpeppers on the red and white quinoa boxes are both great!!

    You can also have it for breakfast with coconut milk,honey and fresh fruit!!

    i like making a quinoa salad with lots of veggies like spinach, zucchini, corn, cucumber, tomato, asparagus, pretty much anything you can think of. it tastes good like that or with a little lemon juice and olive oil.

    There is a post on here for a zucchini quinoa lasagna!! I have not tried it yet but it looks tasty!!

    I love quinoa, and have made a couple recipes with it. It's very much like brown rice, only (in my opinion) more desireable because it's a whole protein and it has more protein than brown rice. That also means it's pretty high in calories. So when I prepare quinoa, I generally try to add lower-calorie foods with it.

    One recipe: Roast some veggies like carrots, parsnips, or zucchini with a bit of olive oil and a non-salty spice like Mrs. Dash. In addition, I'll saute some other veggies like celery, scallions, and mushrooms. I'll add all that to the cooked quinoa, and sauce it up with a bit of olive oil and lemon juice. Or, use lowfat dressing like Girard's reduced-calorie Champagne dressing, Italian dressing, whatever you like. If I want it to be a full meal, like a work lunch, I'll add cooked chicken.

    Quinoa with toasted pinyon nuts and dried cranberries is also good, I taste that up a bit with low-fat raspberry vinaigrette.

    Another recipe I've made is to add to the quinoa: cooked shrimp, cilantro, scallions, chopped cucumber, and dress it up with lime juice.

    Basically, anything you make with brown rice could easily be made with quinoa instead, like stir-fry.

    I made this recipe over the weekend, and it was fabulous! http://simplyrecipes.com/recipes/spinach_and_orzo_salad/
    As it is written, it's fairly high in calories but I used a whole bag of baby spinach leaves to stretch it to almost 8 servings, and there was still plenty of dressing for all the extra greens.
    I'm going to try it again and replace the orzo with quinoa to make it healthier. I don't think that reduces the calorie count much but I think the other advantages of quionoa over orzo pasta make up for that difference. You can play around with the amounts of the other high-calorie ingredients to make it healthier too.
