Roast Cabbage

Have you guys tried plain and simple roasted cabbage with olive oil and pepper? It's so so good but I think I'm a little hooked on it. What are some other great, simple and *cheap* foods you guys have as go-tos?

    I take my cabbage and stir fry it in olive oil and add some corned beef.
    I also like to boil cabbage in chicken stock.
    Bok choi lasts a while and is great stir fried with some rice.
    Do a search on spaghetti squash, it's great for bulking up soups. I do NOT use it in replacement of noodles because it takes on the taste of whatever you pair it with. You CAN add it to your noodles to bulk them up, but I prefer to use it in my soups or stir fry.

    Love cooked cabbage, but I've never roasted it. Will have to try.

    Corned beef and cabbage is one of my all-time favorite meals.
  • It's super delish...If you let the edges crisp a little it seriously transforms it, haha.
