gammon - more calories after cooking?

I just bought some gammon steaks for my dinner and the nutrition information on the packet says 100g raw as sold contains 135kcal but then it also says a typical steak grilled and then trimmed of fat (100g) contains 205kcal.
Is it just me or does this not make sense? How can it have MORE calories once it's cooked and trimmed of fat?
I am confused! How should I log it?

You'll find it's probably because cooked steak weighs less than when it was raw, so to get a 100g cooked steak you might have to start with maybe 150g of raw product - as water is lost during grilling.0
