Ok so let say my calorie goal is 1200 calories daily. If I run 8 miles and burn 800 calories (running is pretty spot on at about 100 calories per mile so I'm not concerned with the calorie accuracy) then eating 2000 calories would be the equivalent of eating just the 1200 on my nonexercise day? That seems like a lot of calories...still trying to wrap my head around that.

Yeah that's why exercise is a great weight loss tool.
It enables you to be able to eat a bit more, which altogether makes the journey to a healthier you much easier, not discounting all the other great benefits too.

Well that's a relief. I plan on running 8 miles 3 days a week so on those days I can afford to eat a whole pint of certain ice creams like talenti' s vanilla bean which is 800 for the whole thing.
