Weight Watchers Corn Salad--a summer fav of mine
I love love love this recipe. It's from an old Weight Watchers cookbook I bought in 2006. It really goes best with baked Tostitos Scoops.
1 cup frozen (but thawed) corn
1/2 diced and seeded green bell pepper
1/2 diced and seeded tomato
2 tablespoons fresh choppped cilantro
2 teaspoons balsamic vinegar
Salt to taste.
Mix together and serve! When I make it, the corn is usually still frozen so i let it sit overnight in the fridge.
Enjoy!

No problem! It's very good! Def a summer staple in my book! I just made it for a cookout this past weekend and my friends loved it!

I don't. I will have to check my ww cookbook tonight. It's listed as a topping for chicken quesadillas in the cookbook, but I have always made it seperately as a healthy dip that I dont have to feel bad about snacking on!
