Gluten Sensitivity?

I know there is a lot of controversy these days about gluten, gluten sensitivity, and such. Many people think it's been overhyped. Me among them.
Now, I don't live and die by the scale, but I can't help but get a LITTLE frustrated after a 1.5lb gain overnight on a calorie deficit day. So I've been looking over my food diary over the days where this frustrating trend seems to occur (taking into account TOM, super heavy workout days, etc). And I noticed that days where I had more gluten based food, ESPECIALLY bread, I would "gain"...basically equaling major bloat.
Could this mean I have a bit of a gluten sensitivity? I don't think I would give up gluten totally, but it was definitely eye opening to see that trend to spelled out, whereas if I hadn't been keeping a food log, there would have been no way I would have seen this trend.

There's no reason to be sensitive to gluten. gluten, in fact, is a real arsehole and hates all of us. hell, gluten hacked my facebook account once and posted foodporn links.0

Yes.But even low sodium days have this issue. I've been cutting back my sodium intake a ton and still see this trend.

I am a Celiac. I don't add extra salt to my food (and I drink over 100 ounces of water the days I do.), very, very, rarely eat processed foods, and eat extremely clean over all (think--no gluten free cookies and crap like that.) Even I will sometimes bloat up on higher carb (brown rice, quiona, potatoes....) days.
Please don't blame gluten, unless you have actually gotten tested and told that you have an official intolerance/celiac/wheat allergy. If you do that, then please, by all means cut it out of your diet.
Also, I know you said you don't live and die by the scale, but how often are you weighing yourself? Weight can fluctuate greatly on any day, given a million different circumstances.0
