Vegetable help

Hi Everyone,

I need some help/ideas on veggies. I eat only green beans (love) and lettuces. I need some ideas on what I can slowly introduce to myself so that I won't hate vegetables altogether....

    How about mixing some diced squash (zucchini and yellow crookneck) into marinara sauce to serve over pasta? I put squash in a lot of things. I also mix in baby peas a lot. Cucumber has a mild flavor and is good in cold salads.

    Looking around here and from experimentation alot can be put into pasta sauces.
    Try adding some shredded carrot to your next spaghetti, with some fresh or frozen peppers and some small chopped cucumbers.

    Pasta salads are nice places for tomato, green onion, carrot, cucumber, peppers and tons more. Try putting cheese sauce over broccoli and cauliflower(or anything really) or any other sauce you like. Or soups. Roasted veggies are good too, when some fresh veggies go on sale you can put them in the oven with black pepper, garlic, and drizzle of olive oil.

    Experiment with different preparations. If you don't care for something boiled, drizzle OVOO and roast them or put them on the grill. You can use tin foil to make packages, fill with sliced potatoes, onions, a little bacon if you like and cook in the oven or on the grill.

    Cheese sauce hides a multitude of things. Vegetable soup is fabulous as you can add whatever you want. Make some smoothies combining fruits and veggies, greek yogurt and a little protein powder if you wish.

    Do a little browsing online for interesting recipes to try out too.

    Why do you think you have to eat veggies? There are absolutely no essential nutrients in vegetables that you can't get elsewhere. Stick to other nutrient rich, healthy foods and you'll be fine.
    I wasn't aware that lycopene was found in meat, dairy etc...
    Maybe nuts or legumes. I think the OP is correct. A diet high in vegetables can be beneficial. No need to question OP's motive.

    I pretty much steam/boil all my veggies, then season them with herbs and spices, gives them a really nice soft texture.
    My personal favourites:
    Broccoli
    Carrots
    Peas
    (not a veggie but mushrooms)
    (also not a veggie but cherry tomatoes because they're just very versatile)

    If you don't love veggies, cutting them small and preparing them with things you do like can help. Bell peppers chopped up in taco filling, lots of veggies in soups (carrots, chili with tomatoes and carrots and whatever else you can find), baked potatoes with some broccoli hidden inside the cheese/sour cream. I love veggies, but if you don't, hide them in favorite dishes. It's a lot about seasonings and preparation. There's a few veggies I only like a couple ways.

  • this might not be the best suggestion for you but it might work. go on a veg juice diet for a week or force yourself to eat veggies for a week or 2, you will be surprised at how much you will crave or want them afterwards. most people wont suggest this but i find if i dont like anything flooding the system will turn me around

    Carrots are easy because they're pretty sweet. I add butter (low fat or Brummel & Brown) and some cinnamon & sugar. I make zucchini boats, slice a zucchini in half length wise, carve out the middle pulp, put in some spaghetti sauce, top with low fat mozzarella cheese & bake at 350 for 20 minutes (my kids like that one) or put in some low fat cheese, about 2 cherry tomatoes cut in half lengthwise and sprinkle with bread crumbs. I tend to find vegetables go down a little easier if they are dressed up. One of my favorites now is a green smoothie: 1 banana, 5.3 oz. vanilla yogurt, 1 cup almond milk, 1-2 T. PB2, & 3 cups of spinach, blend all in the blender. You'll never know there's spinach in it but for the color.

    My suggestion is don't quit trying and try all of them. Prepare them in different ways & don't be afraid to experiment.

    I usually just boil/steam my veggies, gives them a beautifully soft, tender texture. My favourite vegetables :
    Broccoli
    Carrots
    Bell pepper
    Cucumber (ok I know the last 2 are technically fruit)
    tomatoes (another fruit >.> )
    Beetroot is yummy
    pickled gherkins are a great salty snack

    alternatively eat some of those raw with dip (eg. houmous ) and that's a nutritious and delicious snack ^-^
