CURRIED ASPARAGUS SEASON TIME

2 1/2 lbs asparagus reserve 3 spears for top
2 1/2 tsp of salt
1/4 cup of butter
3 tbsp. of scallions chopped
1/4 tsp of curry powder
1/3 cup of flour
2 cups of milk
1/3 cup of parmesan cheese
don't use tough ends ,cut into diagonally 1/2 inch slices in shallow pan add 2 tsp of salt cover with water bring water to boil then simmer fo0r 8 mins or until tender .drain...........melt butter in skillet add.scallions....curry powder...n remaining salt ...cook till bubbly add..flour stirring till blended....add milk slowly cook over med heat stirring once in a while until sauce is thick add asparagus put in 1 1/2 quart casserole or baking dish place reserved spears on top sprinkle with cheese bake 425 15 mins if u like wine u can replace 1/3 cup of white wine,,,and a sip for you .......lol Enjoy 6 servings
