favourite light dinner recipes

does anyone have any favourite healthy dinners that are under 500 calories to share?

    Hi!

    I think one of my favorite light dinners is stir fry. Here's a link to a basic recipe, but I generally use whatever veggies I have on hand (bell peppers, broccoli, mushrooms etc). I also love to grate some ginger root to put in it!

    Another recipe I love is busy day pork chops: http://www.tasteofhome.com/recipes/busy-day-pork-chops This recipe is easy, fast and delicious. I serve it with either a big salad or veggies and a carb like couscous.

    Her recipes are generally under 500 calores per serving, and there are so many choices. I've made quite a few of her recipes and haven't been disappointed yet :)

    Skillet ratatouille over quinoa instead of rice/pasta.

    One cup of the vegetables/tomato sauce is about 200-250 calories, as long as you don't go overboard on the oil. a light brush or drizzle of olive oil won't top 300 calories per one cup serving.

    Then quinoa, about 222 calories per cup. Since the recipe is vegetarian, this will add a considerable protein boost.

    So it's about 450 calories on average, and that leaves enough for a small fruit (like a cup of strawberries) or veggie/salad side dish.

    Zucchini pasta(zucchini cut into pasta sized pieces), shrimp, my favorite tomato based sauce and a little shredded parmesan.
