Italian Sausage Soup
Serves 5 (1 cup serving size)
Ingredients
Sweet Italian Turkey Sausage Lean - 3 links
Potatoes - 2 Lrg
Bacon - 4 slices
Onions - 1 cup, finely chopped
Garlic - 1 clove
Kale, Spinach, or Escarole - 2 cups, roughly chopped
Chicken Broth - 4 cups
Heavy whipping cream - 1/2 cup
Per Serving: Cals -272 Carbs - 17g Fat - 14g Protein - 18g
Instructions
Remove sausage from casings. Brown till well done, like you were cooking ground beef.
Cut up onion/bacon. Add Onion/Bacon to skillet with sausage and cook till onions are tender.
Add finely minced garlic to skillet and cook for 1 more minute. Remove from heat.
Cut potatoes into fine slices. Place Chicken Broth/Potatoes into a soup pot and simmer for 15 mins.
Add the meat/onions/garlic from skillet and 1/2 cup of cream to the soup pot and simmer for 4 mins.

This is a lot like toscana soup. For a vegetarian version, you can use morningstar sausage crumbles instead of the sausage links.

Or throw in a can of cannelli or kidney beans instead of the sausage.

I would live on this soup if I could. The only thing I do different is use fat free 1/2 & 1/2 instead of of heavy cream. SOOOOO GOOD!!!!0
