Dairy and gluten free meal plans?

I'm looking for some meal plan ideas from people who are dairy and/or gluten free. I love to cook, but I think i'm cooking with too much extra stuff added. Like oils or using products with too much fat in them like canned coconut milk (I love it with mashed banana and chai seeds!!!!)
If anyone would like to share their quick and light meals that would be great. How much chicken, red meat, or fish you eat a week and how you cook them.
Ohh and I hate regular salad. So some veggie loaded sides would be great too.
Thanks!!

Don't know if i'm celiac or have a dairy allergy. I cut down on dairy and gluten products a year ago. A month into it when I would have either of them I would quickly have bad side effects soon after. And sometimes i'm still ill feeling the next day, like a dairy hangover. I just trying to listen to what my body tells me.
