My favorite one is just frozen chicken and salsa. Dump it in and a few hours you have a good meal.0

One of my all-time favorites is the Hungry Girl Cheesy Mac Attack. I double the turkey for extra protein, and drizzle a little sugar-free ketchup on top. It's low-cal, but I'm not a huge fan of the macros, so I don't make it that often. So delicious.

Most of the time I pick up some pre-marinated chicken breasts from the store and pick a complimentary broth. Yesterday I picked up some peanut spicy marinated chicken, so I slow cooked 'em in coconut water. I throw some steamed veggies in a tupperware with the chicken, and I've got my lunch.0 -
I read one i want to try....bear with me - it sounds weird...but maybe good?? You slice a bunch of sweet potato thin, and layer sweet potatoe, then seasoned ground turney, then sweet potato...then so forth. then you add a coupole eggs over the entire mixture - its supposed to hold it together so you can slice it like a lasagna. Then you put sauce and cheese, if you want on it.... I keep saying I want to try it! but a little scared it will be horrible! Its either gonna be nasty, or freaking delisious...0

One of my favorites is a 1lb of chicken breasts, 16oz bottle of salsa verde, juice of 1 lime, 2 cloves of crushed garlic, a tsp of dried oregano, a tsp on onion powder, and a 1/4 c of green taco sauce. Cook on high for 4 hours, then shred the chicken and eat with tortillas or in a salad.0

-2 tbs oil
- 1 medium onion
- 1/3 lb carrots
- 6 stalks celery
- 1/3 cup dry red lentils
- 1 big can tomato purree
- 2 tbs tomato paste
- spices spending on what I'm making: curry powder, chili powder, oregano, or thyme, etc.
You can also put in some dark chicken meat or some country style pork ribs.
At the end can stir in frozen veggies like broccoli, cauliflower, corns or peas 15 mins before serving.
My most used recipe as a college student. So cheap. So easy.
Serve over rice, pasta, or as a soup (in this case just put in less salt)0 -

add 1/2 chopped tomato, 1/2 jalepeno (or habanero if you want spicy), 1 can navy beans, 1 large can tomato sauce and chili seasoning. Cook all day. Yum!0 -

You know, I've experimented with sweet potatoes a bit, and I've yet to be disappointed. I made sweet potato tuna cakes a few weeks ago and they were surprisingly delicious. I'm now really curious about the Sweet Potato Turkey Lasagna....0 -

I use my crock pot all the time. I recently tried a new concoction (recipe was for chicken but I really wanted pork loin instead)
1 or 2lb pork loin
6-10 oz of basil pesto (depending on weight of meat)
1-1.5 cup chicken broth (again, depending on meat)
Rub the pork loin with the pesto, pour in the chicken broth (around not over the meat), cook on low 8-10 hours until pork is cooked. I'm not sure exactly how many calories it is b/c it depends on the weight of the meat, but it wasn't more than 250 per serving I believe.0 -

This is a variation of an online recipe.
A can of tomatoes (I use sodium free, could also seasoned tomatoes)
A can of low sodium black beans
A cup of frozen corn (canned works just fine, too)
A can of low sodium chicken broth.
Seasoning to taste -- I use chili powder, cumin, oregano, and a tad of red pepper flakes for heat.
Stir it all. Put two or three chicken breasts on top and cook until they're falling apart. Shred the chicken in the tomato mixture and you're good to go.
I eat it on salad, the spouse eats it on brown rice. Leftovers are yummy in a pita bread.0 -
Mexican Soup (very similar to a recipe posted above)
Place two or three chicken breasts on the bottom of the slow cooker (they can even be frozen). I rub a bit of olive oil on the bottom of the crock first. Rub the chicken with taco seasoning (I use Trader Joe's). Then pour in:
Jar of salsa
Can of black beans (not drained) (use any kind of beans you like)
Can of chopped tomatoes (unsalted, not drained)
Finely chopped onion
Chopped red or green peppers
A large box of low-sodium chicken broth (I use Trader Joe's)
Put it on high for the first few hours if the chicken was frozen, and then turn to low. I guess I let it cook about 8 hours. It's not like you can hurt it by letting it go longer, you just want to make sure the chicken is cooked through. The chicken will fall apart easily, just shred it with a fork and stir before serving.
Can easily be made vegetarian by using more/different beans and veggie stock instead of chicken.
Serve with a dollop of greek yogurt (or sour cream) and shredded cheese, if you want. I put tortilla chips on the side for the kids, but I pass on the chips right now since I'm in losing mode.0 -

Chicken breast

chilli chicken and sweet potato serves 4
200g chicken breast - diced
1 sweet potato - diced
1 onion - diced
1 tin chopped tomatoes
30g red lentils
1 veg stock cube
1 carton or tin of passata
3 tsp chilli powder
I put it on in the morning before I go to work, when I get home I take the lid off to let the sauce thicken.
you can leave out the lentil, but they add a nice texture.
it works out at 188 calories a portion, depending on the weight of your sweet potato and whether you want to add more chicken.0 -
I do whole chickens in my crockpot...crumple a few balls of foil in the bottom of the insert and set the chickens in the, breast side down. Season the chickens however you like them best and let it go all day. It'll fall of the bone when it's done. i've done this with bone in turkey breast, too. My crockpot holds two rotisserie sized chickens in it.
I am a fan of Ice Cream Bucket Lasagna, too. Line a clean ice cream container with plastic wrap and layer in your lasagna ingredients. Freeze. When you want lasagna for dinner, pop it out of the tub and remove the plastic wrap. Put it in the crockpot (the round ice cream bucket making this doable) and add a cup of water...let it go all day and melt cheese on top when you get home.
I do grocery management (OAMC, Once A Month Cooking), so most of our dinners come from the freezer to the table with little fuss. I keep things like stew meat, vegetables and seasonings in a heavy duty ziplock and then all we have to do is dump it in the CP and turn it on. Or dump a few bags into a skillet, cover it and dinner is done in about 20-30 minutes.0 -
the chicken breast (fresh or frozen) and a jar of salsa is one of my fav's - sometimes I add a can of corn & a can of black beans.
If you have the calories, when ready to eat, you can add some shredded cheese and/or a tablespoon of Sour Cream. Option also to serve over rice.
the other fav is pulled pork- so pork shoulder - when done, drain, pull apart using 2 forks and add some PC Smokin Stampede BBQ sauce

Minute Steak:
-2lbs Round Steak (Sirloin Bottom; whatever non-grilling steak you want to use)
-2 cans Cream of Mushroom low fat
-2 cans Cream of Celery low fat
-Fresh Garlic to Taste
-Salt, pepper
-1 cup of Beef Broth
Cube steak and place all ingredients into the crock-pot. Simmer on low 6-8 hours.
Serve over rice, mashed potatos, biscuits... Whatever your fancy. It's a meat gravy.
I warn you it does NOT have the prettiest presentation; but it is a great eat.
EDIT: I've calculated this to be 365 calories: 6oz of the raw meat, 1/2 cup of instant mashed. I don't personally like the gravy as much as my husband and kid, so I have it calculated using just under a quarter cup total of the gravy.0 -
White Chicken Chili
-1.5 to 2 lbs of chicken breasts
-2 packets McCormicks White Chicken Chili Seasoning
-3 Can Great White Northern Beans
-Water to desired soupiness
Put all ingredients into crock pot (chicken breasts whole). Simmer on medium 6 hours. Shred chicken in crockpot. Garnish with chesse and crackers.
EDIT: I come to 321 calories for this, assuming 7 servings from the total made. *My calculation is based on 3 large, so 1.5lbs of chicken breasts*0 -
Beef and Vegetable Stew
-2lbs Sirloin Steak (Stew meat, etc)
-3 or 4 Red Potatos (I've never tried sweet) cut into Eights
-3/4 pound of carrots (I use the baby ones and typically 1/2 to an entire bag)
-1 12oz Can V-8
-1 Bag Frozen Sweet Corn
-1 bag Frozen Green beans
-Fresh Garlic (I add up to half a head-which cuts down on other seasoning needed)
OPTIONAL
-4 to 6 stalks of celery
-Onion
Place all ingredients, except corn, into the crockpot. Season to taste with pepper or other desired spices. Simmer on Low to Medium (my crockpot will come to a boil in warm) for 6 hours. An hour before you're ready to eat, add the corn.
*You can add the corn sooner, but I prefer mine to still be crisp; where as I dislike the green beans being crisp*
EDIT: I come to about 540 calories per serving assuming 8 servings with the total of the stew. THIS is a HEARTY serving, a full soup bowl. The corn adds a TON of calories, but that and the meat are my favorite parts, so I pick out the carrots and add more corn to mine0
