BUFFALO CHICKEN!!!

I'm from Upstate, NY so I love love love buffalo chicken... However, I stopped eating chicken about a year ago after learning about the poultry industry. Here's an AWESOME buffalo "chicken" salad recipe that clocks in at just 250 calories and is SUPER delicious. Oh, and it literally takes five minutes to make. Definitely gives me the fix I needed:

- As much chopped lettuce as you want. I usually use romaine because it's got crunch factor. I go for about 3 cups, but really knock yourself out on it;
- 2 tbsp Wegman's Buffalo Style Wing Sauce Hot 'n Tangy (it's vegan and SO good...just 35 cal!);
- 1/8 c bleu cheese crumbles (or if you're vegan, leave these out or put in a little soy cheese or vegan sour cream to cut the tang);
- 1 serving Morning Star Meal Starters Chickn Strips (I promise, these actually taste like chicken).

In a large bowl, mix it all up! ENJOY!

PS - if you want to add calories and make this a meal, I suggest tossing it all into a wrap and having it as a sammich of sorts. I like to serve it with a side of home-made french fries (I slice up a potato or sweet potato, add a wee bit of olive oil, season, and bake on 350 for almost an hour)...
