    Sweet Hawaiian Crock Pot Chicken
    1/2 cup light brown sugar
    1 cup pineapple juice
    1/3 cup soy sauce
    2lb chicken tenderloin chunks.

    Mix all together and cook on low in crockpot 6 to 8 hours. Serve over brown rice and we added a bit of Tapito to it which made it taste more Thai like.

    Season and prep a whole chicken like it's Sunday morning and the pastor's coming to dinner. Chuck it in the slow cooker, breast down. Cook on low for 6-7 hours or on high for 4-5. (If your cooker is one with the removable ceramic liner you can buy yourself an extra hour or so of cooking time by preparing this the night before and storing it in the fridge until you're ready to start cooking.) Remove and use the meat in whatever way seems good to you.

    NOW (and this is where the good stuff happens), leave the cooking juices, bones, skin, everything that's not meat, in the slow cooker and cover it with water to within an inch of the top. Toss in a few whole peppercorns, maybe some celery and/or onion. Leave that on low overnight. In the morning strain it into a pitcher and put it in the fridge.

    The fat will rise to the top and solidify; scoop it off and feed it to the dog. You're left with 6-8 cups of low fat low sodium gelatinous liquid gold with which to make soup, simmer veggies, cook rice, drink straight when you feel sniffly - the sky's the limit. I freeze it in 2 cup portions.
