SAHM - what to eat for lunch?

I am a stay at home mom and Im finding difficulty in making myself lunches so I usually just grab some fast food. BAD, I know! But I getting back on the MFP train and I need some ideas for simple lunches! PBJ is getting old quick...

Hi. I'm also a SAHM and I use to only snack on junk food, especially a bag of chips or chocolate. The past 4weeks I changed it to an apple or orange for a snack and lunch is left overs of the previous night or a salad or half a tin of assorted veggies with melted cheese. It tastes good and it is healthy so that's cool0

What about beans on toast, or a pita with some hummus/veggies? Buy a tub of cherry tomatoes, some cottage cheese, or what about tuna with corn thins/crackers and veggies? Or make some tuna mayonnaise up and use it in sandwiches or in a wrap? If you want to cook, why not make some easy cook long grain rice and mix it up with whatever you like, alongside a protein?0

Can you do up some salads or purchase some? I'm currently nomming on this lobster in chili aioli spread on bread slices. I like it because if the baby decides he doesn't approve of his Mamma spending time not fussing over him I can slide it in the fridge and it's just as good to go once he's content.
Some ideas: I substitute a lot of things with Greek yoghurt for extra protein for my own nutritional needs but you can always use whatever suits you best.
Chicken salad made with yoghurt, toss in some walnuts, chopped apples, bit of curry.
Egg salad made with yoghurt and spicy mustard, chopped celery for some crunch.
Crabstick salad made with yoghurt, diced bell peppers, chopped spinach.0 -
An omelette is my usual go to quick food. You can add some veggies and herbs to make it especially tasty.
Sautee a bit of onion or scallions with spinach and red bell peppers in a tad of butter or olive oil. Add some chopped dill and/or parsley.
Make a southwest omelette with beans, corn, tomatoes, salsa, fresh cilantro.
Make it thai style with soy sauce, ginger, garlic, a touch of sesame oil, scallions, cilantro, veggies, and eat it with some thai sweet chili sauce.
Go kid like with cheese and ketchup.
I've also been really into chickpea pancakes. http://ohsheglows.com/2013/09/15/jumbo-chickpea-pancake-a-high-protein-filling-vegan-breakfast-or-lunch/. They don't reheat so well though. ;(
I try to keep roasted chicken/beef in the fridge at all times for such an occasion. Mix it with rice/pasta/some other grain and veggies or keep some wrap bread around for sandwiches.
Have you ever tried middle eastern style fava beans? You can buy them canned or make them from dried. If you buy canned try the California Brand. Eat them in a salad with boiled eggs, tomatoes, cucumbers, peppers, scallions, with a bit of fresh lemon and parsley.
For that matter pretty much any bean salad is super easy, especially if you either use canned or keep a stock of cooked from dried and frozen around.
If you're only making enough for 1 or 1 and a small child the veggie portion chopping of all of these should take less than 10 minutes.0 -

Being at home, we should be able to come up with a very steady menu plan.
I eat a big lunch of meat (chicken or ground beef) on top of veggies (salad or cooked). Sometimes with crackers or rice cakes. And usually with frozen cherries for dessert.
Keep it simple and healthy and fast to make.0 -
being a stay at home mum gives you the freedom to eat better. alot of the time its hard when people are stuck in a stuffy office with fast food options all around. scrambled egg on toast, grilled chicken pita, tuna salad, pita bread pizzas (great to make with kids too!). you can do it X0

One of my favorite things to do is grill a lot of chicken early in the week, then cut it up for salads, wraps, etc each day for lunch. My kids love it too. I buy the big tub of spring mix at Sam's, lots of tomatoes, cucumbers, croutons, cabbage, zucchini, jalapenos, and etc and make huge salads almost everyday for lunch during the week. I love them! They are always so good!!0

Im a SAHM and have just fallen back in love with Sandwiches.
Turkey, cranberry and sprouts in my fav this week. I buy enough to last one week, then i can change it next week.
I also love Ham with pickles and salad.

Antipasto sandwich.
Or a wrap if you prefer. Heaps of salad and veg and you find it quite filling. simple and tasty.0 -
My kids pretty much only ever want sandwiches, so I usually make them pb&j or some combo of meat and cheese. For myself, I love experimenting with new protein smoothies (especially since I usually work out right before lunch). Otherwise, I will have leftovers or cook a ground beef patty or a chicken breast with plenty of Frank's Red Hot for dipping, and eat that alongside a big pile of mixed greens with balsamic vinaigrette. Lately, unfortunately, my husband has been coming home from work and wanting to go out to lunch. This actually helps the kids diversify, but it's totally my downfall. In fact, I find that getting lunch outside of the house is one of the biggest factors in my weight issue!0

I usually do chicken breast or tuna or steak, raw vegetables (cucumbers, peppers, cherry tomatoes) and a bunch of berries.0

Avocado sandwiches, smoothies, hummus, carrots/apples and peanut butter, cottage cheese, leftover veg soups... those are the healthy examples of what I eat for lunch0

I eat all kind of different things... I don't make any difference between lunch and dinner food. The last couple days I've had spaghetti squash with meat sauce and chicken or meatballs. Often chicken breast with veggies, or salads, soup, whatever I'd eat in the evening really.0

I think the easiest and simplest is just to take a lunch sized portion out of whatever you made for dinner the night before and put it in the fridge before you serve dinner. Instant lunch. Or if you made a traditional "meat and two sides" dinner, just cook an extra piece of whatever you cooked and serve it on a giant salad the next day.
I actually have been overusing the cook once eat twice/three times to the point where I'm now actively trying to eat down my "stash." In the fridge right now I have 1.5 11 oz chicken breasts, half of a 10 oz salmon fillet, and a 6 oz pork chop all already cooked and ready for lunching on.0 -
I find having leftovers helpful for lunches. I often make a big batch of lentils with caramelized onions and maybe sauteed peppers and spices (curry, or cumin and garlic, or taco-type seasonings) and eat lunch from it for a couple of days. They are high in protein and good cold or warmed up with spinach salad on the side (I just toss a big bowl of spinach with 1 tsp olive oil, a couple of tsp balsamic vinegar, and a shake of sea salt and pepper).0

Chicken salad with apples, walnuts and grapes. Hard boiled eggs or egg salad. Veggie salad with fruit and chicken. Tuna with mayo and tomatoes. Hummus and veggies ( peppers, carrots etc). Cottage cheese with fruit. One of my favorite fast food places for lunch (actually had it for supper tonight) is Wendy's. I get the 1/2 size apple pecan chicken salad with a small chili (with a packet of sour cream of course).0
