Slow Cooker Barbecue Beer Braised Beef

Ingredients
3 lbs. lean eye or bottom round (like Laura’s Lean Beef Eye Round)
1 onion, sliced thin
2 garlic cloves, minced
1/2 cup ketchup
1/4 cup molasses
1/4 cup apple cider vinegar
2 tbsp. mustard
2 tbsp. brown sugar
1 tbsp. paprika
1/2 tsp. cumin
Hot sauce to taste
1 cup light beer
Instructions
Season the beef with salt and pepper. Add the beef to the slow cooker and top with onions and garlic.
Whisk together the ketchup, molasses, vinegar, mustard, brown sugar, paprika, cumin, and hot sauce. Pout over beef.
Add the beer and then cook on low for 8 hours. Shred or slice.
If you desire a thicker sauce, pour the sauce into a saucepan and bring to a simmer. Reduce until thick, about 8 minutes.
