Delicious! High Protein, Veg Friendly: Peanutty Quinoa Bowls

Here is how I prepared it:

1/2 cup quinoa
1 cup vegetable broth
1 teaspoon olive oil
1 small red bell pepper, seeded and diced
1/2 small head cauliflower
2 tablespoons chunky peanut butter
1 tablespoon bottled lime juice
1 tablespoon water
1 teaspoon soy sauce
1/2 teaspoon brown sugar
1/2 teaspoon freshly grated ginger
Salt and Pepper to taste

I used chunky peanut butter and left out the chopped peanuts to save some calories.

Cook the quinoa in the broth. While quinoa is cooking, add oil to a pan and saute the red bell pepper for three minutes, then remove it to a big salad bowl and add the cauliflower and two tablespoons of water. Cover and allow the cauliflower to steam for 5 minutes. Transfer to the bowl with the bell pepper. Mix the sauce ingredients (peanut butter through ginger), then dump the quinoa over the cauliflower, add the sauce and stir to combine. Season as needed (I found it just needed a tiny touch of salt nothing else.)

As I made it: serves 2 at 369 calories per serving. When I added it to my diary, the myfitnesspal app congratulated me on it being a high protein food. It's full of veggies and protein. But more to the point, it's completely and utterly delicious.
