Does anyone have any tasty low calorie vegetarian packed lunch ideas??
I've been veggie for 17 years but now i'm cutting down on fat in cheese and houmous, I'm running out of lunch ideas that are quick and easy.
I seem to be addicted to peri peri so anything with that in would be great

something that I like to do is make a huge batch of ratatouille(cooked veg with tinned tomatoes) on the weekend, and then it can be used as a side, on pasta/rice, in a wrap/sandwich, in omelettes or on it's own as a standalone dish. I tend to make the batch with just salt and pepper, and then add herbs/spices to portions to fit my meal (sometimes I'll stir in a bit of pesto, or add indian spices to make a curry!) But you could easily add peri peri to the whole thing whilst you make it if you like - it would go well with the tomato base.
Then there's salad wraps/sandwiches of course, if you want to replace the hummus you could spread the wrap with some low fat cream cheese and peri peri sauce - I usually use a hot sweet chilli sauce and it works well.
A lunchbox snack idea is carrot sticks - very easy and tasty.
For some protein maybe you could try taking a slice of tortilla (spanish omelette, not a wrap!) That way you can fill it with whatever veggies you like.0 -
I don't know what your restrictions are but here are some that I make for my lunches:
Pasta with tomatosauce, easily prepared the night before. Put in whatever beans/lentils/veggies you like.
Fry up a bag of frozen broccoli, add some creme fraiche and indian spice and mush together, goes good with rice.
Any sort of salad with beans, lentils, veggies quinoa or whatever you like. Make a low fat dressing to go with it. Could also be made into noodle/pasta/potato salad.
Tofu scrables might make good lunch boxes.
Oven roasted tofu with veggies?
Tortilla with leftover rice, salsa, avocado, blackbeans, lettuce and corn?
I usually just get the leftovers from dinner for my lunchboxes, most things are ok the day after.
