Breakfast Food

I feel limited as far as what I can make for breakfast. Here's why:
-It needs to be quick and easy, or prepared before hand.
-I have a very picky fiance who doesn't like a lot of vegetables.
-It has to be very low-carb or no-carb, dairy free, low sugar and sodium (paleo friendly foods)

Does anyone have any recipes or ideas as far as what I could eat for breakfast? I've tried freezing eggs into muffin tins, but the texture just isn't the same when it is reheated.

    As a breakfast food for a paleo diet, I'd think you could have an egg or two and an apple.

    I'm not eating carbs because of the paleo diet, as suggested by my doctor. I have pretty bad stomach issues, and most grains, dairy, etc will give me unbearable stomach pains.

    Try hard boiled eggs instead of ones in muffin tins? How about a handful of nuts or a vegan protein shake? And a piece of fruit.

    Wildebeast. Gazelle. Shark. Saber tooth tiger. Woolly mammoth. I think those are all paleo-friendly. Of course, it helps if you live in a place where you can hunt them.

    I can't hunt any of that near me, so I often buy a bunch of protein sources and bake them all on the weekend and put them in Ziploc bags. One weekend, I will bake a bunch of chicken breasts. The next weekend, salmon. Third weekend, steak. Fourth weekend, ham. Etc. Just bake it all one afternoon, and stick it in the fridge. When you want it, just toss it in the microwave for a minute and you are good to go. Instant breakfast, lunch, or dinner.

    You might also check out frozen breakfast bowls from Jimmy Dean, Weight Watchers, etc. They tend to be heavy on eggs and ham with a little bit of veggie. Find them in the frozen food section of the grocery store.
