10 pounds to go!

Hi everyone! I'm a frisbee player who has already lost 12 pounds and would like to lost about 10 more to feel as healthy as possible. I'm a vegetarian who is just learning how to cook, so any healthy recipes anyone would to share with me are welcome. :]

here is a soup I just love - Greek Minestroni Soup....Super Hardy and and oh so yummy.
Very easy once you get your ingredients ready. You can use a regular pot too. It calls for Beef broth but you can substitute with a vegetarian one too. I omit the feta cheese ...since it is just a garnish and who needs the added salt and fat. Also, you can add extra veggies too. Use dry thyme if you don't have fresh and Cannellini Beans if you can't find Great Northern. Don't be fooled by the small amount of rice..this type expands like crazy. Enjoy!!

I use eatingwell.com for most recipes. Check out the portebello phiily and the blackbean and mushroom chilli. If my kids like it then it must be okay.0
