HELLO OUT THERE ALL OF YOU FOODIES WHO ARE TRYING TO MAKE HEALTHY CHANGES!
I am a fellow foodie who is sad to give up on my Julia Child-sized proportions of butter butter butter in my cooking, and have been pulling some no-no items from my pantry and fridge over the past days! Anyway, I just made a marvelous salad for lunch--my biggest meal of the day--and want to share it with you! Here are the ingredients--figure out the proportions according to your likes and personal caloric/fat/protein preferences:
Romaine lettuce, chopped
Small sweet potato--skin on, baked or microwaved, then cut into chunks tossed in olive oil
Crumbled feta
Chickpeas--drained, raw
Deli-cut chicken breast--cut into long thin strips
Peach/Mango salsa
Salt and pepper to taste
Sprinkle of marcona almonds (pan-fried and salted Spanish natives)

Anyway, this was the best salad--so many textures and colors and flavors--and the cold/hot contrast with the sweet potato is great! The portions I made were about 850 cals--a big salad--but you can alter however you wish!
Bon appetit!
