Frozen spinach

Anyone have any meal ideas or suggestions for using frozen spinach?

I use it in my eggs in the morning with other veggies too. And if you put it in smoothies with berries you can't really taste the spinach but it adds fiber.0

Yum. I have some in my freezer right now, waiting for the perfect dish.
Some ideas I have in store for it:
- add to soup or curry
- put in lasagna
- turn it into pesto
- put it in my smoothies (I know, sounds yuck... but it's hardly noticeable, apart from the colour)
- add it to pasta sauce0 -

let it thaw, add cheese (ricotta, cheddar, cottage) and some cooked onion, wrap in filo pastry and you have spinach pie:)0

Ditto in the eggs. And also into brown rice w/black beans, onion, jalapeno and some chipotle peppers for a healthy Mexican Black bean dish that you can eat on it's own or use in burritos.
I've put fresh spinach in smoothies, but never the frozen stuff. I'm sure there isn't much difference. It is very true that you can't taste it but you will know it is in there because your smoothie will turn a nice green color (if it is fairly light to begin with), or maybe even a brownish color if you have berries in there. I affectionately refer to them as my "pond scum" smoothies.0 -
Spinach stuffed chicken breasts (I think I actually got the recipe off here)
Spinach stuffed chicken breast
1 (10 ounce) package fresh spinach leaves (I used frozen and it worked perfect)
1/2 cup sour cream
1/2 cup shredded pepperjack cheese (I used a mexican style mix instead)
4 cloves garlic, minced
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 pinch ground black pepper
8 slices bacon
Directions
Preheat the oven to 375 degrees F (190 degrees C). (I set my oven on 400)
Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.
Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.
Bake uncovered for 35 minutes in the preheated oven, then use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.

I have a freezer full of spinach from my garden last summer! I use it so much! I put in in egg white omelets, smoothies, home made sauces like pesto or spaghetti sauce, in tuna patties, lasagna, home made pizza... pretty much everything that is cooked at my house has some added spinach! We love it!0
