Fagioli con Tonno (beans & tuna salad)

A healthy, easy, throw it together salad: just a can of tuna (drained), a can of beans of any type (drained and rinsed), diced veggie (e.g. celery or cucumber), tossed with dressing for a one dish meal.

Tonight, we're having tuna, garbanzos, cucumber and a lemon/pesto dressing. Yum.

The dressing is just olive oil, lemon juice, some pesto from a jar, salt and pepper. I'll probably throw in some fresh basil leaves and lemon zest just to give it a little more oomph.

    yummo I"m making this...... but not tonight.... We are having zucchini pancakes, pollo asado n jicama/mango/cucumber sald - with Tajin! nom nom nommmmy

    I do this. Except instead of olive oil I use 4% cottage cheese. You can change up the meat and use chicken. Gotta have the chick peas though.
