So a co-worker has been telling me about the magic that is coconut oil. Does anyone have any good recipes you make using coconut oil? I've found a smattering of recipes online, but I'd like to hear from you guys/gals on what you like/make.

The only thing I use it in is this
Chai Gingerbread Shake
1 cup warm brewed rooibos chai tea
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon vanilla
2 teaspoons ground ginger
1/2 cup milk- I used unsweetened almond
1 teaspoon coconut oil
sweetener to taste
Put tea bag and spices and vanilla in a measuring jug, add 1 cup boiling water, stir then let sit for 5 minutes. Remove tea bag, stir then put in blender, add coconut oil, sweetener and milk and blend.0 -

I don't eat it, I use it for dry skin and to minimize stretch marks, works wanders.0

my friend told me she uses coconut oil for everything. she also uses coconut sugar as natural replacement for sugar. I didnt check these things out yet but I def want to.0

In the morning, especially since it's winter and cold, I warm up a cup of milk in the microwave, add a teaspoon of coconut oil and a dash of vanilla essence.
It's the most delicious, comforting drink there is.0 -

I just got it yesterday and have already started using it in everything. I use 1 tsp at a time- put it in my oatmeal, my coffee, made an omelette with it, popcorn... I'm basically planning on replacing any use of oil/butter with it and trying to keep it to max 4 tsp (teaspoons, not tablespoons... I think the daily recommended is 2 tbsp/day... I **think**)
Edit: Oh, and I also use it on my skin/lips and in my hair.

Unfortunately, sugar is sugar. Whether it's date sugar, coconut sugar, palm sugar, honey, agave, fruit sugar, brown sugar or white sugar.
I use coconut oil in cocoa tea made with creole chocolate & before I was able to get my hands on that, I'd used it in diet swiss miss cocoa. It was my only 'sweet' treat as it's sweetened with sucralose. My kids also enjoy hot chocolate/cocoa with sugar & coconut oil.
I also use it in my coffee every day, staves off hunger for me. I don't really cook with it as it's got a smoke point of something like degrees F, so instead I add it to things that will benefit from the taste.
The cocoa tea tastes like Almond Joy :happy: mmmmmmmm. I don't eat rice anymore, but my mom used to put a tablespoon of it in finished rice. Makes all the grains stay separate & tastes lends itself well to curries and the like.

Also, I don't eat it for any perceived health benefits. As a T2D, I cannot properly process sugars & starches but still need to meet my energy needs, so I add it to anything I can to increase the caloric content of my food. I think I read somewhere that all fats/oils are 100 cal per tablespoon.
Fats actually drop my blood sugar, so I try to include it in everything I eat, my diet consists of anything that tastes good and doesn't spike my BG.0
