Does anyone have any good trout recipes that does not involve them being fried?

My husband and I have some amazing rainbow trout right by our house and we have been catching lots to fill our freezer. Now we just need some good recipes. Please share :)

    place trout in some aluminum foil, cover with sliced onions, rice wine, salt, pepper, and garlic. fold aluminum into a sealed pouch. Grill for twenty minutes.

    I haven't tried rainbow, but Steelhead trout is my new absolute fave. We get about a 1lb filet, brush it with 2TB melted butter + dill + salt, then squeeze half a lemon over the entire thing. We sometimes grill it, more often we just stick it under the broiler.

    Sooooooooooooooooooooooooooooooooooo good, I could eat it every day.
