Roasted Cauliflower With Parmesan Cheese

6 Cups Cauliflower Florets, Fresh (about 1 Head) or frozen and thawed
1 T olive oil
1/2 t Kosher salt
1/2 t Pepper
1/4 c grated Parmesan cheese

Preheat Oven to 450 F

In a large bowl combine cauliflower, oil, salt and pepper; toss to combine. Transfer cauliflower to a large baking sheet and spread into a single layer. Roast until cauliflower is golden brown, tossing occasionally, about 15 minutes. Remove from oven, place in serving bowl and sprinkle with cheese; toss to mix.

Yields about 3/4 cup per serving. (1 Point)

    That sounds good. Just yesterday I roasted cauliflower, broccoli, bell peppers, carrots, and small red potatoes, yummy

    I've done a variation of this called cauliflower popcorn, but this sounds divine.

    Trying it tomorrow (probably for breakfast LOL) :laugh:

    it was only 1 pt for the old WW points, it cant be that many calories, i suggest putting it in the recipe builder to find out for sure... the only fat you have is the olive oil and you can cut back on that too ooo and the cheese but i dont put that on sometimes either... its sooo good!

    my vegan version of that i also add broccoli but instead of cheese i use nutritional yeast

    This is one of my favorites! I normally cook it until it is VERY VERY brown! I honestly can eat an entire cauliflower, not that I do but I certainly could!!

    i roast mine till its really brown too, its sooo good!

    I have a head of cauliflower in my fridge right now might need to try this.
  • Throw in some brussel sprouts cut in half in the mix. I promise they will not taste like any brussel sprouts you've ever hated. I was converted over Thanksgiving. They're sooo good and add some extra protein.
