Kemi's Low Calorie/Low Fat Chicken Corn Chowder
I love soup, and when I diet I eat alot of soup and sandwiches. Here is a recipe I have tweaked for my diet, it has only 146 calories and 3 grams of fat per serving, and it's absolutely delicious!
Kemi's Low Cal/Low Fat Chicken Corn Chowder
1 can of chicken broth (14 oz)
2 cans of cream of potato soup
1 cup diced carrots
2 medium stalks celery (diced)
1/4 large red pepper (diced)
1/2 small can of diced green chiles
1.3 cups frozen yellow corn
12 oz. boneless chicken breast
1/2 cup fat free half & half
1 cup water
Cut up chicken into bite sized pieces and cook in pam until it's almost cooked through (all white on outside). Drain and put aside.
In a small saucepan, boil carrots and celery for 10 mins. While they are boiling, add the chicken broth and cream of potato soup to a large pot and turn to medium. Add preboiled carrots and celery, red pepper, green chiles and corn to soup and bring to a boil, reduce heat and simmer until carrots and celery are soft. Add chicken during last 10 mins. Add fat free half & half just before serving and heat through.
The soup will be thick and only about 7 servings, you can stop here if you like. I like to add a cup of water to bring the servings up to 8 (will be more soupy than chowder, but just as delicious).

167 Calories, 3 grams fat per 1 cup serving (without added water)
