Simple Food Fixes

In an effort to get more protein and fiber I have been trying to eat more beans, but don't have time to make them from scratch. I have tried canned beans and thought they were so gross, but today I got an impulse and added a spoon full of salsa to a half cup of beans. What a difference! They tasted great, and it only added a couple calories! I am sure this is nothing new to some people, but it was a terrific find for me.

Please share with me your other food fixes you've discovered that make something you don't like into something great! I would love some inspiration!

    I like to put beans in tuna salad and homemade chili.
    Tonight I'm making Eatingwell.com Chili with Sweet Potatoes and Black Beans.

    I like to add canned vegetables and brown rice to tomato soup....all things I would eat on their own but it makes something quick and easy like soup more of a substantial meal, and sneaks some extra servings of veggies in!

    I put nuts and fruits in Greek nonfat yogurt. Alone, it's a little "uninspiring". I also like to use hummus as veggie dip. For quick meals at night, I put chicken breast with Trader Joe's masala sauce and put about 2 cups of frozen edamame to give the meal texture and added nutrients, not to mention the extra protein and fiber. For breading, I make my own mix of almond meal and soy flour. I dip the chicken in egg white followed by almond meal + soy flour mixture. I then bake the chicken. Beats using the high carb breading sold in stores.

    edemame which you buy frozen and then boil or microwave (or not, sometimes I eat them frozen <3) you can add a little soy sauce and rice vinegar

    puree white beans with spices earth balance (well, you'll probably want butter), they're like mashed potatoes only better

    Make sure you give them a GOOD rinse, gets rid of the gross flavor a lot. Next time, add in the salsa, a little bit of chili powder, some cumin, and a small spoonful of plain, non-fat greek yogurt (or sour cream, if you want)... one of my favorite quick meals!

    I like frying up some onions in a little bit of olive oil and a little soy sauce (la choy) They taste great with pinto beans :-)

    I know this is a post about quick fixes- but if you ever want to make your own beans- here is a really easy crock pot recipe! I made them twice last week. They don't need any oils or grease and are very tasty! http://allrecipes.com/Recipe/Refried-Beans-Without-the-Refry/Detail.aspx They took about 6 hours in my crock pot and I mixed in a little cotija cheese and they were really good. My kids loved them. I also love them with salsa!

    I always use whole wheat everything and it adds in more fiber. I also use panko instead of bread crumbs- they have way less calories. I sometimes puree spinach and add it to canned tomato sauce. My kids don't know it's there and you can't really taste it but it adds a big nutrient boost.
