Which are low calorie andare easy fixes. I have two little ones to cook for as well but they love healthy food (grilled chickens, beans, fruit, veggys, fish, yogurts) also I can't lie, I love to snack avd absolutely love ice cream. I was wondering if anyone has tried skinny cow ice cream or artic zero ice cream pints

I love, love, LOVE Skinny Cow ice cream sandwiches. (If you go look for them, though, they're round instead of the classic rectangle ice cream sandwiches.) And they're only like 140 calories, I think, per sandwich. Also, Edy's Outshine fruit bars are wonderful, and low in calories, too. They have real fruit pieces in them and are bursting with flavor. My family's favorite flavor is the coconut, but they have tons of other flavors available, too.
As for recipes, I just found a super awesome one for asparagus. My husband hated asparagus, and my daughter was really apprehensive about trying it. I, myself, had never eaten it before, but I wanted to expand my veggie variety at home, so I figured I'd give it a whirl. It was AMAZING!!! Here are a few links to recipes I like. I tend to modify things a lot by reducing some of the butter , oil or cheese called for, or adding in veggies. I have found most recipes can be made a bit healthier just by making smart swaps (greek yogurt in place of sour cream and sometimes in place of mayo), reducing the sugar oils and butter required, and I have learned to cut out a lot of the cheese in recipes.

I use brown rice in place of quinoa sometimes too. It goes well with baked chicken or pork chops.

Cut the extra butter in the grits, but keep the cheese - it makes the grits all the better (if you like grits and I know a lot of people don't, but hey, I am southern!)

I like the Skinny Cow stuff but I think the Arctic Zero is nasty but to each his own. As for recipes, I really like the Bobby Deen cook book (Not My Mamma's...whatever) and I use the Hungry Girl 300 under 300 quite a bit as well. The HG book requires some fiddling because she gets way into the fat-free this and fat-free that which I don't like. I tend to substitute low-fat for fat-free and the recipes work just fine and it doesn't add many calories..0
