Can't eat all my calories

Just last week, I started weight training and my trainer asked me to change my caloric intake from 1,200 to 1,600 per day, broken down to 40% carbs, 30% protein and 30% fat. I have no issues eating healthy foods - I love everything (although I have the occasional splurge on something decadent). But I am actually having a hard time eating enough calories - especially on my cardio days. Additionally, I cannot seem to balance out the 40-30-30 part - where I go over in one of these categories while staying under in calories. I would welcome someone to look at my diary and offer tips on what I can be doing differently.

    i just took a quick look and it seems your usually high on carbs and low on protein and fats, try a couple handfuls of cashews or almonds, they are low carb and about a 50/50 split of fat/protein. also very calorie dense so they up your counts fast

    Reduced fat cheese and unsweetened yogurts are excellent for getting protein and fats in. A small cheese plate at the end of the day would help bring your ratios up to where they need to be for 40/30/30. Avocado and nuts are good for adding good fats with lean proteins.

    Also, soy meats are often lower in fat than their real-meat counterpart but still protein dense. A good option, but you have to read the labels before you buy. Some brands are overloaded with salt & fat. Tofurky is a good brand with a decent range of products. You can find several types in standard grocery stores now.
