Protein Blueberry Muffins Recipe

These work awesome as a snack to take on the go. Or as a little starter in the morning with a cup of coffee.



# Blueberry Muffins

1.5 cups Oats. (Blend untill a floury texture.)
Add 3 scoops protein powder (Vanilla works best, blend untill mixed well)

From here you can play around with how you mix in the next ingredients... you'll probably have to stir them unless you have a powerful food processor or blender.

1.5 cups Fat Free Cottage Cheese
6 Eggs (Can be replaced with 9 egg whites if you want NO fat)
Blend those ingredients till they are mixed well.
add about 1/2 cup Frozen (or fresh) blueberries. ( or more if you wish)
mix those in by hand... if you blend them you'll have a wierd blue muffin. :)

OK so you can pour those into muffin cups and bake them at about 350 for about 20 mins. Or if you don't have a muffin tin (like me) just pour them into a general baking dish with some calorie free cooking spray so it doesnt stick.

Those are awesome :-) a 1/2 inch thick 2x2 inch square will have around 15 g protein about 1-2 grams of fat (depending on your egg/eggwhite balance) and about 6-10 g carbs.

    bump! thanks. this is similar to another recipe on here for banana-blueberry protein bread... but I love the muffin tin idea!

  • Tried my Luck at baking these yesterday and they are actually really tasty... Would never guess they are protien muffins!!

    Also did a tray of banana nut Muffins, Same Recipe just blend in 2 bananas and stir in a half cup of nuts!! Also really tasty!!

    Silpat or silicone mats are great alternatives to cooking sprays, which kind of scare me. I also love silicone bakeware. Nothing sticks, it's awesome.
