Im trying to do atkins, allwoing myself 75 carbs ar most per day and not going over 1400 calories per day. If anyone has recipies they could share that would be awesome! as well as helathy snack ideas!

    love my pork rinds for snacks--occasionally ( I am not doing Atkins, so I need to be careful)

    Spaghetti squash is the best! You can do anything you want with it once it is cooked--whatever you would do with pasta you can do with this stuff. Laughig cow cheese melted in it with some ragu pizza quick sauce (4 carbs for 1/4 cup) is heaven.

    Zucchini ribbons! Take 2 zucchinis and peel them, skin and all, right down until you get to the seeds. Peel them right in a pan. Pour about 1/4-1/2 cup of chicken broth in there, with some spices, 2 wedges of laughing cow cheese, and some diced tomatoes (or not), put a lid on it, steam it some, stir it some, steam it some more, stir it some more, get that cheese a melted, and WOW!!!! My husband begs for this. Says he could eat it every day.

    Turnip fries!!! My newest find! Turnips are purple and white, solid in a bag in the refrigerated produce section. No need to peel, just slice like french fries and put on a foil lined pan sprayed with Pam. Spray the top, sprinkle with some seasoning, bake at 375 for 30 mins, but turn in the middle. Then stick under broiler for a min or two until crispy (not burned --I did that once, but they were still good - LOL).

    Let me know if you have any recipes as well. I am doing Medifast, but I do need to eat one meal a day that I prepare on my own.

    I don't do low carb but I am usually low on my protein so I looked into snacks with protein. I add in almonds, string cheese, spinach, and egg whites when I need to up my protein for the day! Around girly time I can't seem to get full so I eat 5 egg whites when this happens. About 85 cals total. :)

    Try spighetti squash with just about any sauce. I like homeade maranara with lots of veggies. I make an avacado pesto. See below

    1 avacado
    1/4 cup parsley
    3 tablespoons parm cheese
    2 tablespoon chives
    1/2 - 1/3 cup of warm water
    salt to taste

    1/2 of this recipe and 1 cup of spighetti squash is about 260cal 21 carbs...But it's a whole meal!
    I love greek yogurt with frozen berries and a hard bolied egg in the morning.

    slice both ends of to make it easy to stand up.
    slice in 1/2 length wise
    spray cookie sheet or foil on cookie sheet with cooking spry.
    place cut side down and stab with fork a few times to vent
    cook at 375 degrees for 45 min for a 2 -2 1/2 lb squash
    scrap ou i nsides with fork
    serve with favorite sauce.

    That is how I used to cook mine, but I got so tired of trying to cut that dang thing in half. So I just put it in the oven-whole!!!! For about an hour, then I sliced it in half lengthwise, and if it was not soft enough, I just put it back in . When soft enough, you can let it cook if you want, or just go right at it and start scraping with the fork as above. Sometimes it is so sweet, that no sauce is needed.
