Hi all!!! I am trying to get together a personal recipe book together, so I can have a wide range of healthy meals! Please post your favorite low carb recipe here I can't wait to try them all!

My favorite meal is vegetarian tacos!
Minute - Multi-grain Medley, 1/4 Bag (17 carbs)
Peppers - Sweet, green, raw, 7.5 strips (1 carbs)
Peppers - Jalapeno, raw, 0.13 pepper (0 carbs)
Daisy - Sour Cream 1 Tbsp, 1 tbsp (3 carbs)
Generic - Centrella Shredded Sharp Cheddar Cheese, 1/4 cup (0 carbs)
Sauce - Pepper, tabasco, 1 tsp (0 carbs)
El Milagro - Corn Tortilla, 2 tortilla (24 carbs)
Tomatoes - Cherry Tomato, 4 tomatos (3 carbs)
Total of 48 carbs. That's a small amount of carbs for me since I'm supposed to have 304 a day.
I warm up my tortillas in the oven for 2 to 3 minutes. Layer on a small amount of sour cream, then the multi grain medley rice, then the Tabasco sauce, then jalapenos and green peppers, add cheese, add tomatoes.0 -

roasted chicken has become my go-to monday night dinner, especially since it provides leftovers for a couple of days and the carcass goes to stock.
1 basic 5-ish pound chicken
olive oil
kosher salt
black pepper
herbs de provence
garlic powder
preheat the oven to 400 degrees. take the innards out of the chicken and place it in a pyrex or corningware baking dish, breast side up. drizzle olive oil over the whole chicken, enough to get the skin well lubricated. sprinkle with the seasonings until decently coated (don't go nuts, but don't skimp either). throw in the oven for 1 hour 15 minutes. when it's done, let it rest for about 5-10 minutes and then carve and serve.
if the dish has space, i like to add halved mushrooms, cauliflower nuggets, and/or halved brussels sprouts around the chicken. drizzle those with olive oil and sprinkle with salt, pepper, and thyme. cover just the veggies lightly with aluminum foil to keep them from browning too much (especially brussels sprouts... i've found that beyond about 45 minutes they get into the singed realm).0 -

48 carbs for one meal is high when you're eating low-carb. most people are going to keep their carbs in the 35-40 range all day, not just one meal. if your macros have you eating 304g of carbs per day, you're definitely NOT low-carbing.0 -
