Adjusting Calorie Intake due to Exercise

Hi All,
Hope someone's able to help, as I'm having difficulty getting a sensible answer on this one!
I'm currently 224lbs (down from 280) at 5ft 3" but my weight loss has stalled. I suspect it's because I'm not eating enough to sustain the amount of exercise I cram into a typical day, but I'm not sure how to adjust calories to suit.
I have a disastrous relationship with food, hardly surprising when you've been told 'eat less and you'll lose weight' since you were about 8 years old (I'm now 42!) I'm lucky if I get anywhere near about 1400 calories a day, when my BMR is more like 1800.
I normally do between 2-3 hours a day of physical activity - combinations of spin class, Bodypump, personal training session, aquaerobics, dance rehearsals, Bodybalance and a mixed cardio/resistance gym workout. I'd estimate - based on my heart rate monitor - that I typically burn off about 1000 calories a day in exercise.
Based on this level of deficit, I should be losing at least 3lbs a week, but I barely manage that in a month, sometimes longer!
Even the weight management specialist nurse at my doctor's surgery is unable to offer an explanation as to why the weight isn't dropping off me. My PT says not to worry too much, as my body has changed shape so much, but it's very frustrating and disheartening to see other people dropping the pounds with ease. And my GP's suggestion - 'have you thought about joining Slimming World?' didn't go down to well, considering she didn't ask any lifestyle questions at all!!!
Anyone experienced similar issues? If so, how did you solve them? I'm willing to try pretty much anything safe & legal!

Get a food scale. Weigh every bite you put in your mouth. You might also be overestimating exercise calories burned (this can happen even with a good monitor) so you might have to tweak that, too.0

I love this site but I feel like the exercise totals are off...I think the estimates are too high and it causes me to over eat. I now low ball my exercise totals.0
