    mine is a bit more simpler

    I do my rice in a rice cooker...
    Then chop up some cilantro....
    add it in
    get some lime zest
    and then some lime juice.....
    Ooooh the zest. It is the key, the absolute most important part. :love:

    Don't know if this will interest you but here is a link to a recipe using cauliflower (as rice) to help save calories. I have made this and had to double the lime to get the flavour but it is really good.

    Does the cilantro loose its flavor at all ? This sounds really good!

    As a general rule of cooking, add fresh herbs in the last few minutes of cooking

    I make a version of the Skinnytaste cilantro lime rice. I cook my rice as usual then add some Canola oil, lime juice and cilantro. I use brown rice, as well. Always delicious.

    --If you only have dry cilantro, throw it in at the beginning and boil it with the rice.

    I never understood why there even is a dry cilantro. It has literally ZERO taste. You're wasting your money if you buy it. If you can't get fresh the second best is frozen. NEVER buy dry, It's a less smelly version of fish flakes.

    I found the best is from skinnytaste.com . I skip the cooking rice part and use a rice cooker but the rest I follow and my husband and I think it tastes EXACTLY the same.

    Chipotle's "Skinny" Cilantro Lime Rice
    Gina's Weight Watcher Recipes
    Servings: 4 • Size: 3/4 cup • Old Points: 4 pts • Points+: 5 pts
    Calories: 201.0 • Fat: 3.4 • Carbs: 37.4 • Fiber: 0 • Protein: 4.0 g

    Ingredients:

    1 cup extra long grain rice or basmati rice
    1/2 lime, juice of
    2 cups water
    1 tsp salt
    3 tbsp fresh chopped cilantro
    3 tsp vegetable oil

    Directions:

    In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.

    In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.
